Ingredients

  • 🍆 Eggplant – diced
  • 🫑 Bell pepper – diced

  • Olive oil - 3 tbsp

Instructions

  • 🍆 Grill or bake eggplant until soft.

  • 🍋 In a separate small bowl, whisk together lemon juice, olive oil, and garlic.
