Ingredients
- 🍆 Eggplant – diced
- 🫑 Bell pepper – diced
- 🧅 Red onion – thinly sliced
- 🌿 Parsley – chopped
- 🍋 Lemon juice – 2 tbsp
- 🧄 Garlic – 2 cloves minced
- Olive oil - 3 tbsp
Instructions
- 🍆 Grill or bake eggplant until soft.
- 🥣 In a bowl, combine eggplant, bell pepper, red onion, and parsley.
- 🍋 In a separate small bowl, whisk together lemon juice, olive oil, and garlic.
- 🥗 Pour the dressing over the eggplant mixture and toss gently to combine.
