Duck with Mushroom Risotto

Ingredients

  • 🦆 Duck breast – 2 pieces
  • 🍄 Assorted mushrooms – 1 cup, sliced
  • 🍚 Arborio rice – 1.5 cups
  • 🧅 Onion – 1 medium, chopped
  • 🧄 Garlic – 2 cloves, minced
  • 🌿 Fresh thyme – 1 tsp, chopped
  • 🧀 Parmesan cheese – 1/2 cup, grated
  • 🍷 White wine – 1/2 cup
  • 💧 Chicken broth – 4 cups
  • 🧈 Butter – 2 tbsp
  • 🫒 Olive oil – 1 tbsp
  • 🧂 Salt & pepper – to taste

Instructions

  • 🔥 Sear duck breast skin-side down until crispy, then cook to desired doneness. Let rest and slice.
  • 🧅 Sauté onion and garlic in olive oil until softened. Add rice and toast for a minute.
  • 🍷 Deglaze with white wine, then add warm broth gradually, stirring until absorbed before each addition.
  • 🍄 Sauté mushrooms with thyme and butter until golden. Stir into risotto.
  • 🧀 Stir in Parmesan cheese and butter. Top with sliced duck and serve immediately. ✨
