Ingredients
- 💛 Yellow lentils – 1 cup
- 🧅 Onion – 1 medium, chopped
- 🥕 Carrots – 1/2 cup, diced
- 🍅 Tomatoes – 1 cup, diced
- 🧄 Garlic – 2 cloves, minced
- 🌿 Cilantro – for garnish
- 🍋 Lemon – for serving
Instructions
- 🥣 Rinse lentils thoroughly and soak for 30 minutes.
- 🔥 Sauté onions and garlic in a pot until golden.
- 🥕 Add carrots and tomatoes, cook until softened.
- 🥘 Add lentils and water; simmer until tender.
- 🌿 Garnish with cilantro and serve with lemon wedges.
