Ingredients
- 🍚 Glutinous rice flour – 1 cup
- 💧 Water – 1 cup
- 🍬 Sugar – 1/2 cup
- 🟢 Pistachios – 1/2 cup, shelled
- 🫘 Sweetened white bean paste (shiroan) – 1 cup
- 🥔 Potato starch or cornstarch – for dusting
Instructions
- 🟢 Prepare pistachio filling by grinding pistachios and mixing with sweetened bean paste.
- 🍚 In a microwave-safe bowl, combine glutinous rice flour, water, and sugar. Mix well.
- ♨️ Cover and microwave for 1 minute, stir, and microwave for another minute until translucent and sticky.
- ✨ Dust a surface with potato starch. Divide the mochi dough into equal portions and flatten each one.
- 🟢 Wrap each portion of pistachio filling with mochi dough, pinching to seal. Dust with more starch and serve.
