Curried Pepper Lotus Stem

Ingredients
- 🪷 Lotus stem – sliced
- 🌶️ Bell peppers – chopped
- 🧅 Onion – finely chopped
- 🍅 Tomato – pureed
- 🧄 Ginger-garlic paste – 1 tbsp
- 🌿 Curry leaves – a few
- ✨ Curry powder – 2 tbsp
- 🌿 Coriander – for garnish
Instructions
- 🔥 Heat oil in a pan, add curry leaves and onions, sauté until golden.
- 🧄 Add ginger-garlic paste and sauté for a minute, then add tomato puree.
- 🌶️ Add curry powder, salt, pepper, and sauté well.
- 🪷 Add lotus stem and bell peppers, mix well and cook until tender.
- 🌿 Garnish with coriander and serve hot with rice or roti.
