Curried Pepper Lotus Stem

Ingredients

  • 🪷 Lotus stem – sliced
  • 🌶️ Bell peppers – chopped
  • 🧅 Onion – finely chopped
  • 🍅 Tomato – pureed
  • 🧄 Ginger-garlic paste – 1 tbsp
  • 🌿 Curry leaves – a few
  • ✨ Curry powder – 2 tbsp
  • 🌿 Coriander – for garnish

Instructions

  • 🔥 Heat oil in a pan, add curry leaves and onions, sauté until golden.
  • 🧄 Add ginger-garlic paste and sauté for a minute, then add tomato puree.
  • 🌶️ Add curry powder, salt, pepper, and sauté well.
  • 🪷 Add lotus stem and bell peppers, mix well and cook until tender.
  • 🌿 Garnish with coriander and serve hot with rice or roti.
