Creme Brûlée puff pastry

Ingredients
- 1 sheet puff pastry 🥐
- 1 cup heavy cream 🥛
- 1/4 cup sugar 🍚
- 1 vanilla bean (split and scraped) 🌱
- 4 egg yolks 🥚
- Pinch of salt 🧂
- 2 tablespoons granulated sugar (for brûléeing) ✨
Instructions
- Preheat oven to 375°F (190°C). 🔥
- Cut puff pastry into 6 equal squares. 🔪 Place on a baking sheet lined with parchment paper.
- In a saucepan, combine heavy cream, sugar, vanilla bean and seeds, and salt. 🥣 Bring to a simmer over medium heat. Remove from heat.
- In a separate bowl, whisk egg yolks. 🥚 Slowly drizzle the hot cream mixture into the egg yolks, whisking constantly to temper the eggs.
- Pour the custard mixture back into the saucepan and cook over low heat, stirring constantly, until the custard thickens slightly and coats the back of a spoon.🥄 Do not boil!
- Let the custard cool slightly. Pour the custard into the center of each puff pastry square. 🍮
- Bake for 25-30 minutes, or until the puff pastry is golden brown and the custard is set but still slightly jiggly in the center. ⏲️
- Let cool completely. Refrigerate for at least 2 hours. ❄️
- Just before serving, sprinkle each pastry with granulated sugar. Use a kitchen torch to brûlée the sugar until it is caramelized and golden brown. 🔥
- Serve immediately and enjoy!😋
