Ingredients
- 2 cups heavy cream 🥛
- 1 vanilla bean, split lengthwise 🔪
- 6 large egg yolks 🥚
- 1/2 cup granulated sugar 🍚
- Pinch of salt 🧂
- 1/4 cup granulated sugar (for brûléeing) 🔥
Instructions
- Preheat oven to 325°F (160°C). 🔥
- In a saucepan, combine heavy cream and vanilla bean. Bring to a simmer over medium heat. ♨️
- Remove from heat and let steep for 30 minutes. ⏳
- In a bowl, whisk together egg yolks, sugar, and salt until pale and slightly thickened. 🥣
- Remove vanilla bean from cream (scrape out seeds and add back to the cream). 🥄
- Slowly pour warm cream into egg yolk mixture, whisking constantly. 🔄
- Strain mixture through a fine-mesh sieve into a pitcher. 🥛➡️🥣
- Pour mixture into ramekins. 🍮
- Place ramekins in a baking dish and add hot water to come halfway up the sides of the ramekins. 🛁
- Bake for 30-40 minutes, or until custards are set around the edges but still slightly wobbly in the center. ⏰
- Remove from oven and let cool completely. 🧊
- Refrigerate for at least 2 hours. ❄️
- Before serving, sprinkle each custard with a thin, even layer of sugar. 🥄
- Using a kitchen torch, caramelize the sugar until golden brown and crisp. 🔥
- Let cool for a minute or two before serving. Enjoy! 😋
