Creme brûlée

Ingredients

  • 2 cups heavy cream 🥛
  • 1 vanilla bean, split lengthwise 🔪
  • 6 large egg yolks 🥚
  • 1/2 cup granulated sugar 🍚
  • Pinch of salt 🧂
  • 1/4 cup granulated sugar (for brûléeing) 🔥

Instructions

  • Preheat oven to 325°F (160°C). 🔥
  • In a saucepan, combine heavy cream and vanilla bean. Bring to a simmer over medium heat. ♨️
  • Remove from heat and let steep for 30 minutes. ⏳
  • In a bowl, whisk together egg yolks, sugar, and salt until pale and slightly thickened. 🥣
  • Remove vanilla bean from cream (scrape out seeds and add back to the cream). 🥄
  • Slowly pour warm cream into egg yolk mixture, whisking constantly. 🔄
  • Strain mixture through a fine-mesh sieve into a pitcher. 🥛➡️🥣
  • Pour mixture into ramekins. 🍮
  • Place ramekins in a baking dish and add hot water to come halfway up the sides of the ramekins. 🛁
  • Bake for 30-40 minutes, or until custards are set around the edges but still slightly wobbly in the center. ⏰
  • Remove from oven and let cool completely. 🧊
  • Refrigerate for at least 2 hours. ❄️
  • Before serving, sprinkle each custard with a thin, even layer of sugar. 🥄
  • Using a kitchen torch, caramelize the sugar until golden brown and crisp. 🔥
  • Let cool for a minute or two before serving. Enjoy! 😋
