Creamy veggies with lemon coriander rice

Ingredients
- 🍚 Rice - 1 cup, basmati
- 🍋 Lemon - 1, juice and zest
- 🌿 Coriander - 1/4 cup, chopped
- Mixed Veggies 🥦🥕 - 2 cups
- Cream 🥛 - 1/2 cup
- Onion 🧅 - 1 medium, chopped
- Garlic 🧄 - 2 cloves, minced
- Ginger - 1 tsp, grated
- Green chilies 🌶️ - 1-2, chopped
Instructions
- 🍚 Cook rice according to package instructions. Once cooked, fluff with a fork and mix in lemon zest, juice, and chopped coriander.
- 🔥 Sauté onions, garlic, and ginger in a pan until golden brown. Add green chilies.
- 🥕 Add mixed vegetables and cook until tender.
- 🥛 Stir in cream and simmer until the sauce thickens slightly. Season with salt and pepper to taste.
- 🍚 Serve the creamy vegetables over the lemon coriander rice.
