Ingredients

  • 🍚 Rice - 1 cup, basmati
  • 🍋 Lemon - 1, juice and zest
  • 🌿 Coriander - 1/4 cup, chopped
  • Mixed Veggies 🥦🥕 - 2 cups
  • Cream 🥛 - 1/2 cup
  • Onion 🧅 - 1 medium, chopped
  • Garlic 🧄 - 2 cloves, minced
  • Ginger - 1 tsp, grated
  • Green chilies 🌶️ - 1-2, chopped

Instructions

  • 🍚 Cook rice according to package instructions. Once cooked, fluff with a fork and mix in lemon zest, juice, and chopped coriander.
  • 🔥 Sauté onions, garlic, and ginger in a pan until golden brown. Add green chilies.
  • 🥕 Add mixed vegetables and cook until tender.
  • 🥛 Stir in cream and simmer until the sauce thickens slightly. Season with salt and pepper to taste.
  • 🍚 Serve the creamy vegetables over the lemon coriander rice.
