Crème Brûlée Matcha

Ingredients
- 2 cups heavy cream 🥛
- 1/2 cup granulated sugar 🍚
- 1/4 teaspoon salt 🧂
- 1 vanilla bean, split and scraped 🌿
- 5 large egg yolks 🥚
- 2 tablespoons matcha powder 🍵
- 6 tablespoons granulated sugar (for brûlée topping) ✨
Instructions
- Preheat oven to 325°F (160°C). 🔥
- In a saucepan, combine heavy cream, sugar, salt, and vanilla bean and seeds. Heat over medium heat until simmering. Remove from heat. 🌡️
- In a bowl, whisk egg yolks until pale. Gradually whisk in the hot cream mixture. 🥣
- Whisk in the matcha powder until smooth. 🍵
- Strain the mixture through a fine-mesh sieve into a pitcher. 🫗
- Pour the mixture into 6 ramekins. Place ramekins in a baking dish and add hot water to the dish until it reaches halfway up the sides of the ramekins. 🛁
- Bake for 30-35 minutes, or until the edges are set but the centers are still slightly jiggly. ⏰
- Remove from the oven and let cool completely. Refrigerate for at least 4 hours. ❄️
- Before serving, sprinkle 1 tablespoon of sugar evenly over the top of each crème brûlée. Use a kitchen torch to caramelize the sugar until golden brown and crisp. 🔥
- Let the caramelized sugar cool slightly before serving. Enjoy! 😋
