Crème Brûlée

Ingredients

  • Heavy cream 🥛: 3 cups
  • Vanilla bean 🌿: 1, split and scraped
  • Egg yolks 🥚: 6 large
  • Granulated sugar 🍚: 1/2 cup, plus more for topping
  • Pinch of salt 🧂

Instructions

  • Preheat oven to 325°F (160°C). 🔥
  • In a saucepan, combine heavy cream and vanilla bean (seeds and pod). Heat over medium heat until simmering. Remove from heat. ♨️
  • In a bowl, whisk together egg yolks, sugar, and salt until pale and slightly thickened. 🥣
  • Slowly pour the warm cream mixture into the egg yolk mixture, whisking constantly to temper the eggs. 🥚+🥛
  • Strain the mixture through a fine-mesh sieve to remove any solids. 🫏
  • Pour the custard into ramekins. 🍮
  • Place the ramekins in a baking dish. Pour hot water into the dish until it reaches halfway up the sides of the ramekins (water bath). 🛁
  • Bake for 30-40 minutes, or until the edges are set but the centers are still slightly jiggly. ⏲️
  • Remove from oven and let cool completely. Refrigerate for at least 4 hours. ❄️
  • Before serving, sprinkle a thin, even layer of sugar over the top of each custard. 🥄+🍚
  • Using a kitchen torch, caramelize the sugar until golden brown and crisp. 🔥
  • Let stand for a minute or two to allow the sugar to harden. Serve immediately. 🍽️
