Ingredients
- Heavy cream 🥛: 3 cups
- Vanilla bean 🌿: 1, split and scraped
- Egg yolks 🥚: 6 large
- Granulated sugar 🍚: 1/2 cup, plus more for topping
- Pinch of salt 🧂
Instructions
- Preheat oven to 325°F (160°C). 🔥
- In a saucepan, combine heavy cream and vanilla bean (seeds and pod). Heat over medium heat until simmering. Remove from heat. ♨️
- In a bowl, whisk together egg yolks, sugar, and salt until pale and slightly thickened. 🥣
- Slowly pour the warm cream mixture into the egg yolk mixture, whisking constantly to temper the eggs. 🥚+🥛
- Strain the mixture through a fine-mesh sieve to remove any solids. 🫏
- Pour the custard into ramekins. 🍮
- Place the ramekins in a baking dish. Pour hot water into the dish until it reaches halfway up the sides of the ramekins (water bath). 🛁
- Bake for 30-40 minutes, or until the edges are set but the centers are still slightly jiggly. ⏲️
- Remove from oven and let cool completely. Refrigerate for at least 4 hours. ❄️
- Before serving, sprinkle a thin, even layer of sugar over the top of each custard. 🥄+🍚
- Using a kitchen torch, caramelize the sugar until golden brown and crisp. 🔥
- Let stand for a minute or two to allow the sugar to harden. Serve immediately. 🍽️
