Ingredients

  • 🍚 Couscous – 1 cup
  • 💧 Water or broth – 1 cup
  • 🥕 Mixed vegetables (carrots, zucchini) – 1 cup
  • 🌿 Herbs (parsley, mint) – 2 tbsp chopped
  • 🍋 Lemon juice – 1 tbsp
  • 🥄 Olive oil – 2 tbsp
  • 🧂 Salt and pepper – to taste

Instructions

  • 💧 Bring water or broth to a boil in a saucepan.
  • 🍚 Stir in couscous, cover, and remove from heat. Let it sit for 5 minutes.
  • 🥄 Fluff couscous with a fork and mix in olive oil and lemon juice.
  • 🥕 Sauté mixed vegetables until tender.
  • 🌿 Combine couscous and vegetables. Season with salt, pepper, and herbs. Serve warm.
