Ingredients
- 🍚 Couscous – 1 cup
- 💧 Water or broth – 1 cup
- 🥕 Mixed vegetables (carrots, zucchini) – 1 cup
- 🌿 Herbs (parsley, mint) – 2 tbsp chopped
- 🍋 Lemon juice – 1 tbsp
- 🥄 Olive oil – 2 tbsp
- 🧂 Salt and pepper – to taste
Instructions
- 💧 Bring water or broth to a boil in a saucepan.
- 🍚 Stir in couscous, cover, and remove from heat. Let it sit for 5 minutes.
- 🥄 Fluff couscous with a fork and mix in olive oil and lemon juice.
- 🥕 Sauté mixed vegetables until tender.
- 🌿 Combine couscous and vegetables. Season with salt, pepper, and herbs. Serve warm.
