Ingredients

  • 🥩 Pork or Chicken – 500g cubes (for Pandi Curry)
  • 🍚 Rice Flour – 2 cups (for Kadambuttu/Rice Balls)
  • 🧅 Onions – 2 large, finely sliced
  • 🌿 Kachampuli – 1 tsp (Coorgi black vinegar)
  • 🌶️ Green Chilies – 3-4 slit
  • 🧂 Coorgi Masala – roasted blend of cumin, pepper, and mustard
  • 🧄 Ginger-Garlic Paste – 1 tbsp

Instructions

  • 🥘 Sauté onions, ginger-garlic paste, and green chilies until golden brown.
  • 🥩 Add the meat and roasted Coorgi masala, searing until the pieces are well-coated.
  • 💧 Stir in the Kachampuli vinegar and simmer until the meat is tender and the gravy is dark.
  • 🍚 Mix rice flour with hot water to form small balls and steam them until firm and soft.
  • ✨ Serve the spicy, tangy curry hot alongside the steamed rice balls for a traditional experience.
