Ingredients
- 🍚 Cooked Rice – 2 cups, day-old preferred
- 🥥 Coconut Milk – 1/2 cup
- 🧅 Onion – 1/2 cup, chopped
- 🥕 Carrots – 1/2 cup, diced
- 🫑 Bell Pepper – 1/2 cup, diced
- 🧄 Garlic – 2 cloves, minced
- 🧂 Soy Sauce – 2 tbsp
- 🌴 Coconut Oil – 2 tbsp
Instructions
- 🔥 Heat coconut oil in a wok or large pan over medium-high heat.
- 🧅 Add onion and garlic, sauté until fragrant and golden.
- 🥕 Add carrots and bell pepper, cook until slightly tender.
- 🍚 Add cooked rice and coconut milk. Stir-fry until heated through.
- 🧂 Season with soy sauce and stir well. Serve hot, garnished as desired.
