Ingredients

  • 🍚 Cooked Rice – 2 cups, day-old preferred
  • 🥥 Coconut Milk – 1/2 cup
  • 🧅 Onion – 1/2 cup, chopped
  • 🥕 Carrots – 1/2 cup, diced
  • 🫑 Bell Pepper – 1/2 cup, diced
  • 🧄 Garlic – 2 cloves, minced
  • 🧂 Soy Sauce – 2 tbsp
  • 🌴 Coconut Oil – 2 tbsp

Instructions

  • 🔥 Heat coconut oil in a wok or large pan over medium-high heat.
  • 🧅 Add onion and garlic, sauté until fragrant and golden.
  • 🥕 Add carrots and bell pepper, cook until slightly tender.
  • 🍚 Add cooked rice and coconut milk. Stir-fry until heated through.
  • 🧂 Season with soy sauce and stir well. Serve hot, garnished as desired.
