Ingredients
- 🍚 Chittimutyalu Rice – 2 cups, short-grain aromatic rice
- 🧅 Onions – 2 medium, thinly sliced
- 🫚 Ginger-Garlic Paste – 1 tbsp freshly made
- 🌿 Mint & Coriander – 1/2 cup fresh leaves
- 🧂 Whole Spices – cloves, cardamom, and cinnamon
- 🍗 Chicken or Paneer – 500g for the side gravy
- 🍅 Tomatoes – 2 medium, chopped for curry
- 🧈 Ghee – 2 tbsp for tempering
Instructions
- 🍚 Wash and soak the Chittimutyalu rice for 20 minutes to achieve a soft, fluffy texture.
- 🔥 Sauté whole spices and onions in ghee until golden, then stir in ginger-garlic paste and mint.
- 🥘 Add the soaked rice with water (1:1.5 ratio) and cook until the grains are tender and aromatic.
- 🥘 Simultaneously prepare a spicy gravy using tomatoes, onions, and your choice of protein or veggies.
