Ingredients
- 🐔 Chicken livers – 500g, trimmed
- 🧅 Onion – 1 medium, chopped
- 🥕 Carrot – 1 medium, chopped
- 🥓 Pancetta – 50g, diced
- 🌿 Fresh herbs (sage, rosemary) – chopped
- 🍷 Red wine – 125ml
- 🍞 Bread – for toasting
Instructions
- 🔥 Sauté pancetta, onion, and carrot until softened.
- 🐔 Add chicken livers and herbs, cooking until browned.
- 🍷 Deglaze with red wine and reduce slightly.
- ⏳ Simmer until sauce thickens, around 15 minutes.
- 🍞 Serve ragu on toasted bread slices.
