Ingredients

  • 🐔 Chicken livers – 500g, trimmed
  • 🧅 Onion – 1 medium, chopped
  • 🥕 Carrot – 1 medium, chopped
  • 🥓 Pancetta – 50g, diced
  • 🌿 Fresh herbs (sage, rosemary) – chopped
  • 🍷 Red wine – 125ml
  • 🍞 Bread – for toasting

Instructions

  • 🔥 Sauté pancetta, onion, and carrot until softened.
  • 🐔 Add chicken livers and herbs, cooking until browned.
  • 🍷 Deglaze with red wine and reduce slightly.
  • ⏳ Simmer until sauce thickens, around 15 minutes.
  • 🍞 Serve ragu on toasted bread slices.
