Ingredients
- 🐔 Chicken Thighs – 1.5 lbs, cut into pieces
- 🍜 Egg Noodles – 8 oz, cooked
- 🥥 Coconut Milk – 4 cups
- 🌶️ Khao Soi Curry Paste – 4 tbsp
- 🧅 Red Onion – 1, thinly sliced
- 🍋 Lime – 1, cut into wedges
- 🌿 Cilantro – for garnish
- 🥜 Peanuts – 1/4 cup, chopped
Instructions
- 🔥 Heat oil in a pot, add curry paste and cook until fragrant.
- 🐔 Add chicken and stir until browned.
- 🥥 Pour in coconut milk and simmer until chicken is cooked.
- 🍜 Serve over egg noodles, top with red onion, cilantro, peanuts, and a lime wedge.
