Ingredients

  • 🐔 Chicken Thighs – 1.5 lbs, cut into pieces
  • 🍜 Egg Noodles – 8 oz, cooked
  • 🥥 Coconut Milk – 4 cups
  • 🌶️ Khao Soi Curry Paste – 4 tbsp
  • 🧅 Red Onion – 1, thinly sliced
  • 🍋 Lime – 1, cut into wedges
  • 🌿 Cilantro – for garnish
  • 🥜 Peanuts – 1/4 cup, chopped

Instructions

  • 🔥 Heat oil in a pot, add curry paste and cook until fragrant.
  • 🐔 Add chicken and stir until browned.
  • 🥥 Pour in coconut milk and simmer until chicken is cooked.
  • 🍜 Serve over egg noodles, top with red onion, cilantro, peanuts, and a lime wedge.
