Ingredients

  • 🥩 Ground meat (beef, pork, or chicken) – 1 lb
  • 🧅 Onion – 1 medium, chopped
  • 🫑 Bell pepper – 1, chopped
  • 🍅 Diced tomatoes – 1 can (14 oz)
  • 🌶️ Chili powder – 2 tbsp
  • 🧄 Garlic – 2 cloves, minced
  • 🌽 Corn – 1 cup (canned or frozen)
  • 🖤 Black beans – 1 can (15 oz), rinsed and drained
  • 🧀 Cheddar cheese – shredded, for topping
  • 🧂 Salt and pepper – to taste

Instructions

  • 🔥 Brown the ground meat in a large pot over medium-high heat. Drain any excess grease.
  • 🧅 Add the chopped onion and bell pepper to the pot and cook until softened, about 5 minutes.
  • 🧄 Stir in the minced garlic, chili powder, salt, and pepper. Cook for 1 minute more.
  • 🍅 Add the diced tomatoes, corn, and black beans to the pot. Bring to a simmer, then reduce heat to low.
  • 🥘 Cover and simmer for 15-20 minutes, or until the flavors have melded together.
  • 🧀 Serve hot, topped with shredded cheddar cheese. Enjoy with rice or tortillas.
