Ingredients
- 🥩 Ground meat (beef, pork, or chicken) – 1 lb
- 🧅 Onion – 1 medium, chopped
- 🫑 Bell pepper – 1, chopped
- 🍅 Diced tomatoes – 1 can (14 oz)
- 🌶️ Chili powder – 2 tbsp
- 🧄 Garlic – 2 cloves, minced
- 🌽 Corn – 1 cup (canned or frozen)
- 🖤 Black beans – 1 can (15 oz), rinsed and drained
- 🧀 Cheddar cheese – shredded, for topping
- 🧂 Salt and pepper – to taste
Instructions
- 🔥 Brown the ground meat in a large pot over medium-high heat. Drain any excess grease.
- 🧅 Add the chopped onion and bell pepper to the pot and cook until softened, about 5 minutes.
- 🧄 Stir in the minced garlic, chili powder, salt, and pepper. Cook for 1 minute more.
- 🍅 Add the diced tomatoes, corn, and black beans to the pot. Bring to a simmer, then reduce heat to low.
- 🥘 Cover and simmer for 15-20 minutes, or until the flavors have melded together.
- 🧀 Serve hot, topped with shredded cheddar cheese. Enjoy with rice or tortillas.
