Ingredients
- 🍝 Pasta – spaghetti or bucatini
- 🥓 Guanciale – or pancetta, cubed
- 🥚 Eggs – whole and yolks
- 🧀 Pecorino Romano – grated
- 🖤 Black pepper – freshly ground
Instructions
- 💧 Cook pasta in salted boiling water until al dente.
- 🥓 Crisp guanciale in a pan until golden brown.
- 🥣 Whisk eggs, yolks, cheese, and pepper in a bowl.
- 🍝 Reserve pasta water, drain pasta, and add to pan with guanciale.
- 🍳 Remove from heat, add egg mixture, and toss quickly, adding pasta water to create a creamy sauce. Serve immediately.
