Butter Chilli Mussels

Ingredients
- 🦪 Fresh mussels – 1 kg
- 🌶️ Red chillies – 2-3, finely chopped
- 🧈 Butter – 4 tbsp
- 🧄 Garlic – 3 cloves, minced
- 🌿 Fresh parsley – chopped, for garnish
- 🧅 Shallots – 2, finely chopped
- 🥛 Cream – 1/4 cup (optional)
- 🍋 Lemon juice – 1 tbsp
Instructions
- 🦪 Clean mussels thoroughly, discarding any open ones.
- 🔥 Melt butter in a large pot over medium heat. Add garlic, shallots and chilli and sauté until fragrant.
- 🥘 Add the mussels to the pot, cover and cook until they open (5-7 minutes). Discard any that do not open.
- 🍋 Stir in lemon juice and cream (if using).
- 🌿 Garnish with fresh parsley and serve immediately with crusty bread.
