Braised Pork Over Rice

Ingredients
- 🐷 Pork belly – 1 lb, cut into bite-sized pieces
- 🍚 Cooked rice – for serving
- 🧅 Onion – 1, chopped
- 🧄 Garlic – 4 cloves, minced
- 🍶 Soy sauce – 1/4 cup
- 🍬 Sugar – 2 tbsp
- ⭐ Star anise – 2
- 🌿 Ginger – 2 slices
- 🥚 Hard-boiled eggs (optional) – 4
Instructions
- 🔥 Sear pork belly until browned on all sides.
- 🧅 Add onion, garlic, ginger, and star anise to the pot. Sauté until fragrant.
- 🍶 Pour in soy sauce, sugar, and enough water to cover the pork. Bring to a boil, then reduce heat and simmer for at least 2 hours, or until pork is very tender.
- 🥚 Add hard-boiled eggs (if using) during the last 30 minutes of cooking.
- 🍚 Serve the braised pork and eggs over rice. Spoon the sauce over the top.
