Ingredients
- 🐷 Pork Jowl – 1.5 lbs
- 🧅 Onion – 1 large, chopped
- 🥕 Carrots – 2 medium, chopped
- 🌿 Thyme – 2 sprigs
- 🍷 Red Wine – 1 cup
- 🦴 Chicken or Pork Stock – 4 cups
- 🧄 Garlic – 4 cloves, minced
- 🧂 Salt & Pepper – to taste
- 🌿 Bay Leaf – 1
- 🫒 Olive Oil – 2 tbsp
Instructions
- 🔥 Sear pork jowl in olive oil until browned on all sides.
- 🧅 Add onions, carrots, and garlic to the pot; sauté until softened.
- 🍷 Deglaze the pot with red wine, scraping up any browned bits.
- 🦴 Add stock, thyme, bay leaf, salt, and pepper. Bring to a simmer.
- 🥘 Cover and braise in a low oven (300°F/150°C) or on the stovetop for about 3 hours, or until the pork is very tender.
- ✨ Remove pork, shred or slice. Strain sauce and reduce if needed. Serve pork with sauce.
