Ingredients

  • 🐷 Pork Jowl – 1.5 lbs
  • 🧅 Onion – 1 large, chopped
  • 🥕 Carrots – 2 medium, chopped
  • 🌿 Thyme – 2 sprigs
  • 🍷 Red Wine – 1 cup
  • 🦴 Chicken or Pork Stock – 4 cups
  • 🧄 Garlic – 4 cloves, minced
  • 🧂 Salt & Pepper – to taste
  • 🌿 Bay Leaf – 1
  • 🫒 Olive Oil – 2 tbsp

Instructions

  • 🔥 Sear pork jowl in olive oil until browned on all sides.
  • 🧅 Add onions, carrots, and garlic to the pot; sauté until softened.
  • 🍷 Deglaze the pot with red wine, scraping up any browned bits.
  • 🦴 Add stock, thyme, bay leaf, salt, and pepper. Bring to a simmer.
  • 🥘 Cover and braise in a low oven (300°F/150°C) or on the stovetop for about 3 hours, or until the pork is very tender.
  • ✨ Remove pork, shred or slice. Strain sauce and reduce if needed. Serve pork with sauce.
