Braised Pork Belly with Pak Choy

Ingredients
- 🐷 Pork Belly – 1.5 lbs, skin on
- 🥬 Pak Choy – 1 lb, quartered
- ⭐ Soy Sauce – 1/2 cup
- 🍚 Rice Wine – 1/4 cup
- 🧅 Ginger – 2 slices
- 🧄 Garlic – 3 cloves, minced
- 🍬 Sugar – 2 tbsp
- 🌶️ Chili flakes – 1/2 tsp (optional)
Instructions
- 🔥 Sear pork belly on all sides in a pot until golden brown.
- 🧅 Add ginger, garlic, soy sauce, rice wine, sugar, and chili flakes (if using). Add water to cover the pork belly.
- 🥘 Bring to a boil, then reduce heat and simmer, covered, for about 2 hours, or until pork belly is tender.
- 🥬 Add pak choy during the last 10 minutes of cooking.
- 🍚 Serve hot with rice and spoon braising liquid over the top.
