Blueberry Kunafa

Ingredients

  • 🥣 Kataifi pastry – 250g shredded dough
  • 🧈 Ghee or butter – 1/2 cup melted
  • 🫐 Fresh blueberries – 1 cup for the filling
  • 🧀 Mozzarella or Ricotta – 200g mild cheese
  • 🍯 Sugar syrup – 1 cup infused with lemon
  • 🍋 Lemon juice – 1 teaspoon

Instructions

  • 🥣 Shred the kataifi pastry into small pieces and coat evenly with melted butter.
  • 🫐 Cook blueberries with a little sugar and lemon juice until they soften into a thick sauce.
  • 🥘 Press half the pastry into a baking dish, add a layer of cheese and the blueberry filling, then cover with the rest of the pastry.
  • 🔥 Bake in a preheated oven at 180°C (350°F) for 25-30 minutes until the top is golden and crunchy.
  • ✨ Pour cold sugar syrup over the hot kunafa immediately after baking and serve warm.
