Blueberry Kunafa

Ingredients
- 🥣 Kataifi pastry – 250g shredded dough
- 🧈 Ghee or butter – 1/2 cup melted
- 🫐 Fresh blueberries – 1 cup for the filling
- 🧀 Mozzarella or Ricotta – 200g mild cheese
- 🍯 Sugar syrup – 1 cup infused with lemon
- 🍋 Lemon juice – 1 teaspoon
Instructions
- 🥣 Shred the kataifi pastry into small pieces and coat evenly with melted butter.
- 🫐 Cook blueberries with a little sugar and lemon juice until they soften into a thick sauce.
- 🥘 Press half the pastry into a baking dish, add a layer of cheese and the blueberry filling, then cover with the rest of the pastry.
- 🔥 Bake in a preheated oven at 180°C (350°F) for 25-30 minutes until the top is golden and crunchy.
- ✨ Pour cold sugar syrup over the hot kunafa immediately after baking and serve warm.
