Biryani-e-Khaas Mutton

Ingredients

  • 🍚 Basmati Rice – 2 cups
  • 🐑 Mutton – 1 kg, cut into pieces
  • 🧅 Onions – 3 large, thinly sliced
  • 🫚 Ginger-Garlic Paste – 2 tbsp
  • 🌶️ Green Chillies – 4-5, slit
  • 🌿 Mint Leaves – handful
  • 🌱 Coriander Leaves – handful
  • 🍶 Yogurt – 1 cup
  • 🥄 Biryani Masala – 3 tbsp
  • 🌼 Saffron – a few strands soaked in milk
  • 🧈 Ghee – 4 tbsp
  • 🧂 Salt – to taste

Instructions

  • 🐑 Marinate mutton with yogurt, ginger-garlic paste, biryani masala, and salt. Refrigerate for at least 2 hours.
  • 🧅 Fry sliced onions until golden brown and crisp. Set aside.
  • 🍚 Partially cook basmati rice with salt and whole spices until 70% done. Drain and set aside.
  • 🥘 In a heavy-bottomed pot, layer rice, marinated mutton, fried onions, mint leaves, coriander leaves, and saffron milk.
  • 🔥 Cover the pot tightly and cook on low heat (dum) for 45-60 minutes, or until mutton is tender and rice is fully cooked. Serve hot.
