Ingredients
- 🍚 Basmati Rice – 2 cups
- 🐑 Mutton – 1 kg, cut into pieces
- 🧅 Onions – 3 large, thinly sliced
- 🫚 Ginger-Garlic Paste – 2 tbsp
- 🌶️ Green Chillies – 4-5, slit
- 🌿 Mint Leaves – handful
- 🌱 Coriander Leaves – handful
- 🍶 Yogurt – 1 cup
- 🥄 Biryani Masala – 3 tbsp
- 🌼 Saffron – a few strands soaked in milk
- 🧈 Ghee – 4 tbsp
- 🧂 Salt – to taste
Instructions
- 🐑 Marinate mutton with yogurt, ginger-garlic paste, biryani masala, and salt. Refrigerate for at least 2 hours.
- 🧅 Fry sliced onions until golden brown and crisp. Set aside.
- 🍚 Partially cook basmati rice with salt and whole spices until 70% done. Drain and set aside.
- 🥘 In a heavy-bottomed pot, layer rice, marinated mutton, fried onions, mint leaves, coriander leaves, and saffron milk.
- 🔥 Cover the pot tightly and cook on low heat (dum) for 45-60 minutes, or until mutton is tender and rice is fully cooked. Serve hot.
