Ingredients
- 🍚 Basmati Rice – 2 cups
- 🧅 Onions – 1 large, sliced
- 🥕 Carrots – 1 cup, diced
- 🫘 Green Peas – 1 cup
- 🥔 Potatoes – 1 cup, cubed
- 🌶️ Green Chilies – 2-3, slit
- 🌿 Mint Leaves – for garnish
- 🧄 Ginger-Garlic Paste – 1 tbsp
- 🍶 Cooking Oil – 2 tbsp
- 💧 Water – as needed
- 🧂 Salt – to taste
- ✨ Turmeric Powder – 1 tsp
- 🌶️ Red Chili Powder – 1 tsp
- 🌿 Coriander Powder – 1 tsp
- ✨ Garam Masala – 1/2 tsp
Instructions
- 🍚 Wash and soak the basmati rice for 30 minutes.
- 🔥 Heat oil in a pressure cooker or pot. Add onions and sauté until golden brown.
- 🧄 Add ginger-garlic paste and green chilies. Sauté for a minute.
- 🥕 Add the mixed vegetables (carrots, peas, potatoes) and sauté for 2-3 minutes.
- 🧂 Add salt, turmeric powder, red chili powder, and coriander powder. Mix well.
- 🍚 Add the soaked rice and water (usually double the amount of rice). Bring to a boil.
- 🥘 Pressure cook for 2 whistles or simmer until the rice is cooked and the water is absorbed.
- 🌿 Garnish with mint leaves. Serve hot.
