Ingredients

  • 🍚 Basmati Rice – 2 cups
  • 🧅 Onions – 1 large, sliced
  • 🥕 Carrots – 1 cup, diced
  • 🫘 Green Peas – 1 cup
  • 🥔 Potatoes – 1 cup, cubed
  • 🌶️ Green Chilies – 2-3, slit
  • 🌿 Mint Leaves – for garnish
  • 🧄 Ginger-Garlic Paste – 1 tbsp
  • 🍶 Cooking Oil – 2 tbsp
  • 💧 Water – as needed
  • 🧂 Salt – to taste
  • ✨ Turmeric Powder – 1 tsp
  • 🌶️ Red Chili Powder – 1 tsp
  • 🌿 Coriander Powder – 1 tsp
  • ✨ Garam Masala – 1/2 tsp

Instructions

  • 🍚 Wash and soak the basmati rice for 30 minutes.
  • 🔥 Heat oil in a pressure cooker or pot. Add onions and sauté until golden brown.
  • 🧄 Add ginger-garlic paste and green chilies. Sauté for a minute.
  • 🥕 Add the mixed vegetables (carrots, peas, potatoes) and sauté for 2-3 minutes.
  • 🧂 Add salt, turmeric powder, red chili powder, and coriander powder. Mix well.
  • 🍚 Add the soaked rice and water (usually double the amount of rice). Bring to a boil.
  • 🥘 Pressure cook for 2 whistles or simmer until the rice is cooked and the water is absorbed.
  • 🌿 Garnish with mint leaves. Serve hot.
