Ingredients
- 1 cup rice flour 🍚
- 1/2 cup coconut milk 🥥🥛
- 1/2 cup water 💧
- 1/4 tsp turmeric powder 💛
- 1/4 tsp salt 🧂
- 1/4 cup sliced pork belly 🥓
- 1/4 cup shrimp 🍤
- 1/2 cup mung beans, soaked 🌱
- 1/2 onion, thinly sliced 🧅
- 1 cup bean sprouts 🌿
- Vegetable oil 🛢️
- Lettuce 🥬
- Herbs (mint, cilantro) 🌿🌱
Instructions
- Mix rice flour, coconut milk, water, turmeric powder, and salt in a bowl. Let it rest for 30 minutes. 🥣
- Cook mung beans until soft. Drain and set aside. 🍲
- Heat oil in a large non-stick skillet. Add pork belly and shrimp, cook until browned. 🍳🥓🍤
- Add onions and cook until translucent. 🧅
- Add mung beans and bean sprouts. Stir-fry briefly. 🌱
- Pour a ladleful of batter into the skillet, swirling to create a thin crepe. 🥞
- Cover and cook for 2-3 minutes, or until the edges are golden brown and crispy. 🔥
- Fold the crepe in half. 🌮
- Serve immediately with lettuce and herbs. 🥬🌿🌱
