Ingredients

  • 1 cup rice flour 🍚
  • 1/2 cup coconut milk 🥥🥛
  • 1/2 cup water 💧
  • 1/4 tsp turmeric powder 💛
  • 1/4 tsp salt 🧂
  • 1/4 cup sliced pork belly 🥓
  • 1/4 cup shrimp 🍤
  • 1/2 cup mung beans, soaked 🌱
  • 1/2 onion, thinly sliced 🧅
  • 1 cup bean sprouts 🌿
  • Vegetable oil 🛢️
  • Lettuce 🥬
  • Herbs (mint, cilantro) 🌿🌱

Instructions

  • Mix rice flour, coconut milk, water, turmeric powder, and salt in a bowl. Let it rest for 30 minutes. 🥣
  • Cook mung beans until soft. Drain and set aside. 🍲
  • Heat oil in a large non-stick skillet. Add pork belly and shrimp, cook until browned. 🍳🥓🍤
  • Add onions and cook until translucent. 🧅
  • Add mung beans and bean sprouts. Stir-fry briefly. 🌱
  • Pour a ladleful of batter into the skillet, swirling to create a thin crepe. 🥞
  • Cover and cook for 2-3 minutes, or until the edges are golden brown and crispy. 🔥
  • Fold the crepe in half. 🌮
  • Serve immediately with lettuce and herbs. 🥬🌿🌱
