Ingredients
- 3 lbs beef shank or beef chuck 🥩
- 1 lb pork knuckle or pork hock 🐷
- 1/2 lb beef brisket 🐄
- 1/4 cup annatto seeds 🌰
- 2 tbsp vegetable oil 🛢️
- 4 stalks lemongrass, bruised 🌿
- 2 tbsp shrimp paste (mắm ruốc) 🦐
- 2 tbsp chili powder 🌶️
- 1 tbsp sugar 🍬
- 1 tbsp salt 🧂
- 1 tsp MSG (optional) ✨
- 8 cups beef broth 🍲
- 1 package (14 oz) thick rice vermicelli noodles (bún) 🍜
- 1/2 cup sliced onions 🧅
- 1/4 cup chopped cilantro 🌿
- 1/4 cup chopped scallions 🧅
- Lime wedges 🍋
- Bean sprouts 🌱
- Banana blossom (optional) 🍌🌸
- Mint leaves 🌿
- Vietnamese coriander (rau răm) 🌿
- Sliced chili peppers 🌶️
Instructions
- Soak beef shank and pork knuckle in cold water for 30 minutes. Rinse and drain. 💧
- Blanch beef shank and pork knuckle in boiling water for 5 minutes. Rinse and drain. This removes impurities. ♨️
- Tie annatto seeds in cheesecloth. Heat oil in a large pot. Fry annatto seeds until oil turns red. Discard seeds. 🔥
- Add lemongrass to the pot and sauté for 2 minutes. 🍋
- Add beef shank, pork knuckle, and beef brisket to the pot. Cover with beef broth. 🍲
- Bring to a boil, then reduce heat and simmer for 2-3 hours, or until beef is tender. Skim off any scum that rises to the surface. ⏳
- Remove beef brisket and slice thinly. Set aside. 🔪
- In a small bowl, mix shrimp paste, chili powder, sugar, salt, and MSG (if using). Add to the pot. Stir well. 🌶️🦐
- Cook noodles according to package directions. Drain well. 🍜
- To serve, place noodles in a bowl. Top with sliced beef brisket, beef shank, and pork knuckle. 🥣
- Ladle hot broth over the noodles and meat. ♨️
- Garnish with sliced onions, cilantro, and scallions. 🧅🌿
- Serve with lime wedges, bean sprouts, banana blossom (optional), mint leaves, Vietnamese coriander, and sliced chili peppers. 🍋🌱🌿
