Ingredients
- 2 English muffins, split 🍞
- 4 slices Canadian bacon 🥓
- 2 large eggs 🥚
- 1 tbsp white vinegar 🍶
- 1/2 cup Hollandaise sauce (store-bought or homemade) 🧈
- 1 tbsp chopped fresh chives (optional) 🌿
- Salt and pepper to taste 🧂
Instructions
- Prepare Hollandaise sauce according to package or recipe instructions. Keep warm. ♨️
- Toast English muffin halves until golden brown. 🍞
- In a large skillet, cook Canadian bacon over medium heat until lightly browned. 🥓
- Poach eggs: Fill a saucepan with about 3 inches of water and bring to a simmer. Add vinegar. Create a whirlpool in the water and gently crack an egg into the center. Repeat with the second egg. Cook for 3-4 minutes for runny yolks. 🥚
- Remove poached eggs with a slotted spoon and drain on paper towels. 🥄
- Assemble the Benny: Place toasted English muffin halves on plates. Top with Canadian bacon, then a poached egg. 🍽️
- Spoon Hollandaise sauce generously over the eggs. 🧈
- Garnish with chopped chives (if using) and season with salt and pepper to taste. 🌿
- Serve immediately and enjoy! 🎉
