Ingredients

  • 2 English muffins, split 🍞
  • 4 slices Canadian bacon 🥓
  • 2 large eggs 🥚
  • 1 tbsp white vinegar 🍶
  • 1/2 cup Hollandaise sauce (store-bought or homemade) 🧈
  • 1 tbsp chopped fresh chives (optional) 🌿
  • Salt and pepper to taste 🧂

Instructions

  • Prepare Hollandaise sauce according to package or recipe instructions. Keep warm. ♨️
  • Toast English muffin halves until golden brown. 🍞
  • In a large skillet, cook Canadian bacon over medium heat until lightly browned. 🥓
  • Poach eggs: Fill a saucepan with about 3 inches of water and bring to a simmer. Add vinegar. Create a whirlpool in the water and gently crack an egg into the center. Repeat with the second egg. Cook for 3-4 minutes for runny yolks. 🥚
  • Remove poached eggs with a slotted spoon and drain on paper towels. 🥄
  • Assemble the Benny: Place toasted English muffin halves on plates. Top with Canadian bacon, then a poached egg. 🍽️
  • Spoon Hollandaise sauce generously over the eggs. 🧈
  • Garnish with chopped chives (if using) and season with salt and pepper to taste. 🌿
  • Serve immediately and enjoy! 🎉
