Ingredients

  • 🍚 Basmati Rice – soaked
  • 🥭 Avakaya (Mango Pickle) – 2 tbsp
  • 🥕 Mixed Vegetables – diced
  • 🧅 Onions – sliced
  • 🌶️ Green Chilies – slit
  • 🌿 Mint & Cilantro – chopped
  • 🧄 Ginger-Garlic Paste – 1 tbsp
  • 🍋 Lemon Juice – 1 tbsp
  • 🍶 Yogurt – 1/2 cup

Instructions

  • 🔥 Sauté onions and green chilies in oil until golden brown.
  • 🧄 Add ginger-garlic paste and cook for a minute.
  • 🥕 Add mixed vegetables and cook until partially done.
  • 🥭 Stir in avakaya, yogurt, mint, cilantro, and lemon juice.
  • 🍚 Layer rice and vegetable mixture, then cook on low heat until rice is done. ✨ Garnish and serve hot.
