Ingredients
- 🍚 Basmati Rice – soaked
- 🥭 Avakaya (Mango Pickle) – 2 tbsp
- 🥕 Mixed Vegetables – diced
- 🧅 Onions – sliced
- 🌶️ Green Chilies – slit
- 🌿 Mint & Cilantro – chopped
- 🧄 Ginger-Garlic Paste – 1 tbsp
- 🍋 Lemon Juice – 1 tbsp
- 🍶 Yogurt – 1/2 cup
Instructions
- 🔥 Sauté onions and green chilies in oil until golden brown.
- 🧄 Add ginger-garlic paste and cook for a minute.
- 🥕 Add mixed vegetables and cook until partially done.
- 🥭 Stir in avakaya, yogurt, mint, cilantro, and lemon juice.
- 🍚 Layer rice and vegetable mixture, then cook on low heat until rice is done. ✨ Garnish and serve hot.
