Ingredients
- 🥩 Beef Chuck – 3 lbs, cut into large cubes
- 🧅 Onions – 2 large, quartered
- 🧄 Garlic – 6 cloves, minced
- 🥕 Carrots – 2 large, peeled and chopped
- 🌶️ Bell Peppers – 2, seeded and quartered
- 🍷 Red Wine – 1 cup
- 🌿 Bay Leaves – 2
- 🍅 Tomato Paste – 2 tbsp
- 🦴 Beef Broth – 4 cups
- 🧂 Salt & Pepper – to taste
- 🫒 Olive Oil – 2 tbsp
Instructions
- 🔥 Sear beef in olive oil until browned on all sides.
- 🧅 Sauté onions and garlic until softened.
- 🥕 Add carrots, bell peppers, and tomato paste; cook for 5 minutes.
- 🍷 Deglaze the pot with red wine, scraping up any browned bits.
- 🍲 Return beef to the pot, add beef broth and bay leaves. Simmer for 2 hours or until beef is tender. Season with salt and pepper.
- ✨ Serve hot with your choice of sides.
