Ingredients

  • 🥩 Beef Chuck – 3 lbs, cut into large cubes
  • 🧅 Onions – 2 large, quartered
  • 🧄 Garlic – 6 cloves, minced
  • 🥕 Carrots – 2 large, peeled and chopped
  • 🌶️ Bell Peppers – 2, seeded and quartered
  • 🍷 Red Wine – 1 cup
  • 🌿 Bay Leaves – 2
  • 🍅 Tomato Paste – 2 tbsp
  • 🦴 Beef Broth – 4 cups
  • 🧂 Salt & Pepper – to taste
  • 🫒 Olive Oil – 2 tbsp

Instructions

  • 🔥 Sear beef in olive oil until browned on all sides.
  • 🧅 Sauté onions and garlic until softened.
  • 🥕 Add carrots, bell peppers, and tomato paste; cook for 5 minutes.
  • 🍷 Deglaze the pot with red wine, scraping up any browned bits.
  • 🍲 Return beef to the pot, add beef broth and bay leaves. Simmer for 2 hours or until beef is tender. Season with salt and pepper.
  • ✨ Serve hot with your choice of sides.
