🌍 Indian-Inspired Fusion🍽️ Main Course👥 2-3 servings

Ingredients

  • 1 cup Basmati Rice 🍚
  • 1 tbsp Olive Oil 🫒
  • 1 Onion, chopped 🧅
  • 2 cloves Garlic, minced 🧄
  • 1 inch Ginger, grated
  • 1/2 tsp Turmeric Powder 💛
  • 1 tsp Cumin Powder
  • 1/2 tsp Coriander Powder
  • 1/4 tsp Chili Powder (optional)🌶️
  • 1 can (14.5 oz) Diced Tomatoes 🍅
  • 1 cup Vegetable Broth 🥦
  • 1 can (15 oz) Chickpeas, drained and rinsed
  • 1 cup Spinach 🌿
  • Salt and Pepper to taste 🧂
  • Fresh Cilantro, chopped (for garnish)🌿

Instructions

  • Rinse rice until water runs clear. Drain and set aside.
  • Heat olive oil in a pot over medium heat. Add onion and cook until softened, about 5 minutes. 🧅🫒
  • Add garlic and ginger and cook for 1 minute more. 🧄
  • Stir in turmeric powder, cumin powder, coriander powder, and chili powder (if using). Cook for 30 seconds. 💛
  • Add diced tomatoes and vegetable broth. Bring to a boil. 🍅🥦
  • Stir in rice, chickpeas, and spinach. Season with salt and pepper.🍚🌿
  • Reduce heat to low, cover, and simmer for 20-25 minutes, or until rice is cooked and liquid is absorbed.
  • Fluff with a fork and garnish with fresh cilantro. Serve hot! 🌿
