Ingredients

  • 🕊️ 1 Anjou Pigeon
  • 🥓 4 slices of Bacon
  • 🧅 1 Onion, chopped
  • 🍄 8 oz Mushrooms
  • 🍷 1/2 cup Red Wine
  • 🌿 Thyme sprigs
  • 🧈 Butter
  • 🧂 Salt and Pepper to taste

Instructions

  • 🔥 Preheat oven to 375°F (190°C). Season pigeon with salt and pepper.
  • 🥓 Wrap pigeon with bacon slices and truss with kitchen twine.
  • 🧅 Sauté onion and mushrooms in butter until softened.
  • 🕊️ Place pigeon on top of vegetables in a roasting pan, add thyme and red wine.
  • 🥘 Roast for 30-40 minutes, or until internal temperature reaches 165°F (74°C). Let rest before serving.
