Ingredients
- 🕊️ 1 Anjou Pigeon
- 🥓 4 slices of Bacon
- 🧅 1 Onion, chopped
- 🍄 8 oz Mushrooms
- 🍷 1/2 cup Red Wine
- 🌿 Thyme sprigs
- 🧈 Butter
- 🧂 Salt and Pepper to taste
Instructions
- 🔥 Preheat oven to 375°F (190°C). Season pigeon with salt and pepper.
- 🥓 Wrap pigeon with bacon slices and truss with kitchen twine.
- 🧅 Sauté onion and mushrooms in butter until softened.
- 🕊️ Place pigeon on top of vegetables in a roasting pan, add thyme and red wine.
- 🥘 Roast for 30-40 minutes, or until internal temperature reaches 165°F (74°C). Let rest before serving.
