Alentejan Black Pork

Ingredients

  • 🥩 Black Pork – 1 kg, cut into cubes
  • 🧅 Onions – 2 medium, chopped
  • 🧄 Garlic – 4 cloves, minced
  • 🌶️ Paprika – 1 tbsp
  • 🍷 Red Wine – 1 cup
  • 🌿 Bay Leaf – 2
  • 🐖 Lard or Olive Oil – for frying
  • 🧂 Salt and Pepper – to taste

Instructions

  • 🔥 Heat lard or olive oil in a large pot or skillet.
  • 🥩 Sear the black pork cubes until browned on all sides.
  • 🧅 Add onions and garlic, sauté until softened and fragrant.
  • 🍷 Pour in red wine, add paprika and bay leaves. Season with salt and pepper.
  • 🥘 Cover and simmer over low heat for about 45 minutes, or until the pork is tender. Serve hot.
